Delicious moist spiced cake that everyone will love.


  • 2 cups sugar

    2 cups all purpose flour

    1 tsp baking soda

    1 tsp baking powder

    2 tsp ground cinnamon

    1/2 tsp ground nutmeg

    3 cups finely grated carrots

    1 cup of crushed pineapple

    1 cup vegetable oil

    4 eggs

    1/2 cup finely diced candied ginger

    Favorite Cream Cheese Frosting


  1. Preheat oven at 350 degrees Fahrenheit. Lightly flour and grease two 9 inch cake pans.
  2. Stir together in a mixing bowl dry ingredients : Sugar, flour, baking soda, baking powder and spices. Add wet ingredients: carrots, pineapples, oil and eggs. Once fully combined, add candied ginger that has been dusted with flour. Stir by hand or an electric mixer until well blended.
  3. Pour in cake pans evenly. Bake approximately for 35 minutes. Cake is done if wooden stick comes out clean.
  4. Let cakes cool. Frost with cream cheese frosting and sprinkle with candied ginger. Enjoy!
  5. Should be refrigerated.
