Delicious moist spiced cake that everyone will love.
- 2 cups sugar
2 cups all purpose flour
1 tsp baking soda
1 tsp baking powder
2 tsp ground cinnamon
1/2 tsp ground nutmeg
3 cups finely grated carrots
1 cup of crushed pineapple
1 cup vegetable oil
1/2 cup finely diced candied ginger
Favorite Cream Cheese Frosting
- Preheat oven at 350 degrees Fahrenheit. Lightly flour and grease two 9 inch cake pans.
- Stir together in a mixing bowl dry ingredients : Sugar, flour, baking soda, baking powder and spices. Add wet ingredients: carrots, pineapples, oil and eggs. Once fully combined, add candied ginger that has been dusted with flour. Stir by hand or an electric mixer until well blended.
- Pour in cake pans evenly. Bake approximately for 35 minutes. Cake is done if wooden stick comes out clean.
- Let cakes cool. Frost with cream cheese frosting and sprinkle with candied ginger. Enjoy!
- Should be refrigerated.
