Sweet potato pie is a staple to many cuisines for holidays, church dinners and special gatherings. Not only is this custard pie easy to make but it is absolutely amazing in flavor and will please any crowd. It is a must have dessert for your special occasions. This sweet potato recipe is a must have in your recipe files. Don't lose it because you will be asked to make it again.

Ingredients

  • 1 9 in unbaked pie crust.
    2 cups mashed sweet potatoes - (should be orange on the inside.)
    1 - 14oz can sweetened condensed milk
    1/4 cup cane sugar
    1/4 cup brown sugar
    1 tsp cinnamon
    1/2 tsp nutmeg
    1/4 tsp ginger
    1 T pure vanilla extract
    1/4 tsp orange extract
    2 eggs
    Dash of salt

Instructions

  1. Preparation: Step 1: Preheat oven to 350 degrees Fahrenheit

    Scrub the sweet potatoes. Place whole potatoes in a pot of water and bring to a boil. Once this temperature is reached, turn it down to med. Allow the potatoes to cook until you can put a fork easily through them. Don't let them over cook. They should be soft but not mushy. Take the potatoes out of the water. Let them rest in a colander to drain the excess water. Allow them to cool.

    Step 2:

    Once the potatoes are cool enough to handle, gently, take a butter knife or fork, make an incision through the skin of the potato to remove the skin. It should peel right off. Cut the very ends of the potatoes off. This part is very stringy and could create an undesired texture if left alone.

    Once peeled, be sure to take off any blemishes and any opaque colored flesh. Potatoes should be a bright orange color. Place them in a bowl.

    Step 3:

    Mash them well. Add all other ingredients except the eggs. Blend well. Either mix by hand or with an electric mixture. A mixer will make it smoother. However, some people prefer to mix by hand to keep the slightly lumpy texture.

    Step 4:

    Taste your batter. If you are satisfied with your creation, proceed by adding the eggs. Don't over mix. Let the well blended mixture sit for a minute to allow all the flavors to permeate.

    Step 5:

    Pour the mixture into the crust. Tap pie gently on the table to release any bubbles. You can brush egg wash or milk onto the crust to create a more polished look if you'd like. Place the filled pie on a baking sheet and place in a preheated oven at 350°.

    Once cooked. Take out of oven. Place on a wire rack to completely cool. Enjoy!
